CHICKEN MEATLOAF @ DELFLYN'S KITCHEN

Get ready to indulge in a culinary delight that's both flavorful and comforting. Say hello to my mouth-watering chicken meatloaf recipe! This twist on the classic meatloaf is packed with juicy chicken mince, spices, sauces, veggies and hint of sweetness that will leave you craving for more.     

NUTRITIONAL HIGHLIGHTS:

HIGH-PROTEIN: Made with lean chicken, this meatloaf is an excellent source of protein to support muscle growth and maintenance. 
LOW-FAT: Baked to perfection without any added oils, this recipe is a heart-healthy option for those who are looking to reduce their fat intake.
RICH IN VITAMINS AND MINERAL: Chicken is a good source of essential vitamins like B12, B6, B3. It also contains choline and is a source of protein, iron and selenium.  
GOOD SOURCE OF FIBER: Depending on the ingredients used, this meatloaf also contains a decent amount of fiber from the onions, garlic, carrots and breadcrumbs. 


INGREDIENTS:

  • MINCED CHICKEN BREAST 500GM 
  • 1 LARGE EGG   
  • 1 MEDIUM SIZE CARROT 
  • 1 SMALL ONION 
  • 1 MEDIUM SIZE RED BELL PEPPER
  • 1/4 CUP TOMATO KETCHUP 
  • 1/2 TSP MINCED GARLIC 
  • 1TSP WORCESTERSHIRE SAUCE
  • 1TSP RED CHILLI SAUCE 
  • BARBEQUE SAUCE TO GLAZE THE LOAF
  • 1/4 TSP CELERY SEED
  • 1 TBSP CHILLI FLAKES 
  • 1 TBSP OREGANO
  • 1/2 CUP FINE BREADCRUMBS
  • SALT AND PEPPER TO TASTE  

 METHOD:

Take a large mixing bowl. Add in the chicken mince, breadcrumbs and finely chopped bell pepper and keep it aside.
Roughly chop the carrot and onion, add it to the blender and blend it to a fine mixture.
Pour the blended mixture into the bowl of chicken mince. Add in the egg, minced garlic, celery seed, chilli flakes, oregano, sauces, salt and pepper. Fold in all the ingredients using your fingers and form a dough like mixture ready to be baked.
Form a loaf shape with the mixture and place it in the greased baking tray. Bake it in pre heated oven for 30min at 180 degrees centigrade.
Brush the meatloaf with the barbecue sauce to use as a glaze during the last 10 to 15 min of baking.
Serve and enjoy the meatloaf with a slice of bread alongside a warm comforting cup of hot soup or simply pair it with a glass of your preferred wine.
