BANANA BREAD @ DELFLYN'S KITCHEN
Today I am thrilled to share with you one of my most popular recipes, a timeless favorite among my family and friends.
Indulge in the warmth and comfort of my oatmeal Banana Bread, a scrumptious twist on the classic recipe. Made with rolled oats, ripe bananas and buttermilk this moist and flavorful bread is perfect for breakfast, tea or as a delightful treat. The addition of oatmeal adds a fluffy texture and a boost of fiber, making this banana bread a deliciously wholesome choice for your loved ones.
HIGH IN FIBER: With Oats and banana this bread is a good source of dietary fiber supporting healthy digestion.
- 1 CUP SUGAR
- 1 CUP MELTED BUTTER
- 2 EGGS
- 1/2 CUP BUTTERMILK (CURD AND MILK BLENDED)
- 2 MEDIUM SIZE BANANAS
- 2 CUPS FLOUR
- 1 CUP OATMEAL
- 1 TSP VANILLA ESSENCE
- 1 TSP BAKING POWDER
- 1/2 TSP BAKING SODA
- 1 PINCH OF SALT
- 1/2 CUP CHOPPED ALMONDS AND WALNUTS MIXED
METHOD:
Grease a 9" x 5" inch loaf tin and keep it aside.
Combine dry ingredients: In a medium sized bowl, mix together flour, oats, baking powder, baking soda and salt.
Combine wet ingredients: In a large bowl, combine mashed bananas, melted butter, buttermilk, egg, and vanilla essence and stir well until the mixture is smooth and creamy. Add in the sugar and mix until everything is combined well.
Combine wet and dry ingredients: Add the dry ingredients to the wet ingredients and stir until it combines. Do not overmix. Fold in the chopped almonds and walnuts.
Pour the batter into the greased loaf tin.
Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
Once done, leave it to cool for 10 minutes. Transfer to a wire rack to cool completely.
